Food: Healthy Breakfast of Ham+Egg in Toast Basket


Woke up to the wonderful aroma of home-baked ham+egg in toast basket. Mmmmm ... Eggs, my favourite. Wifey and son, Sebastian was preparing breakfast for all while me and Maximus was still sleeping.... =P


Sebastian greasing the muffin tray lightly with some butter. He had already rolled the bread and flattened to be placed into the tray to be pre-baked. Look at the pile of eggs and stir-fried ham with some mushrooms and cucumber, ready to add into the toast basket.


My little chef at work, placing the egg in the toast basket. The ingredients are all in and the finishing touch. An egg placed on top of every toast basket. Look at his deep concentration in preparing this healthy breakfast.


This is how it looks like before going into the oven. The aluminium muffin tray is too small to fit everything in. Have to get a bigger size tray next time... =)


After approximately 15-20 minutes in the oven, here is the outcome. These are really yummy and I recommend everyone to try this out.

Egg and Ham in Toast Basket

Ingredients:

- Bread
- Eggs 
- 4 slices of ham - diced
- Button mushrooms (optional)
- Cucumber or any greens (optional)
- Mozzarella cheese
- Black pepper
- Butter

Method:

Preheat oven to 200c.

Slice the crusts off your bread and flatten with roller.

Grease the muffin tray with butter and push slice of bread down into each hole so that you have a kind of basket. Place the bread in the oven and baked until lightly brown.

While the bread are in the oven, stir fry the diced ham with the button mushrooms and diced cucumbers lightly in pan with some butter.

Remove the toast from oven and place the ingredients into each basket and top it off with some mozzarella cheese. Crack an egg into each toast basket and lightly season with black pepper.

Place back into oven and bake till egg is cooked to your liking.

Serve with some salad for a healthy wholesome breakfast.
